I’m going to be honest right off the bat, I am not the person to usually talk to about the best pancake recipe. Reason being, I’m really not the biggest fan of pancakes… GASP. Trust me, I get enough from my husband to know I’m crazy so when I tried Lemon Poppyseed Pancakes from Bacon Social House here in Denver I was blown away after I finished every.last.bite. I love lemon poppy seed muffins so I figure why not try it and wow… I was amazed and basically forever changed because now I can say I like pancakes.
After searching the web for my own recipe to recreate the best breakfast of my life I was thrilled to find the most delicious Lemon Poppy Seed Pancakes recipe from Lemon Tree Dwelling. It’s super easy to whip up (my go-to), sweet and the perfect way to start any Sunday morning at home. Kirby’s also extremely thrilled I’m finally making pancakes and is really hoping this moves into even more flavors. I guess we’ll just have to see! I wanted to share this recipe in honor of my little sisters 21st birthday this weekend because every birthday should start with a stack of cake!

- 2 Cup All-Purpose Flour
- 3 Tbsp. Granulated Sugar
- 1 Tbsp. Baking Powder
- 1/2 Tsp. Salt
- 1 1/2 Cup Milk
- 2 Tbsp. Vegetable Oil
- 1 Tbsp. Butter melted
- 2 Tbsp. Lemon Juice
- 1 1/2 Tbsp. Poppy Seeds
- Zest of 1 Lemon
- 6 Tbsp. Egg Whites
- 2 Cup Powdered Suger
- 3-4 Tbsp. Fresh Lemon Juice
- 1/2 Tsp. Poppy Seeds

- In a large mixing bowl combine flour, granulated sugar, baking powder, and salt.
- In a separate bowl, combine milk, oil, melted butter, lemon juice, poppy seeds, and lemon zest.
- Mix well; add all at once to flour mixture.
- Gently mix until just combined.
- Beat egg whites until soft peaks form; gently fold into batter.
- Let batter rest 5 minutes.
- Pour by 1/4 c. onto prepared skillet.
- Wait until bubbles form on the surface and pop; then flip pancakes until golden brown on both sides.
- For glaze, combine powdered sugar, lemon juice, and poppy seeds and mix until smooth.
- Pour over pancakes as desired.
