
This High Protein Gluten Free Banana Bread is absolutely a new staple in our household. It’s loaded with protein, simple to make & the kids love it. It’s the perfect way to start your day. As a current nursing mom, I’m looking for healthy, filling foods and this High Protein Gluten Free Banana Bread is just that. I’m someone who is always down for a treat so I definitely added chocolate chips. However you could skip that and make the bread sugar free too. Any add in works like nuts, raisins or even chia seeds for an added bonus. For the kids sake (and mine) chocolate chips works perfectly. For the protein powder, I used my favorite clean chocolate peanut butter protein powder (code EVERYDAYCHIFFON will give you 10% off) for added chocolaty goodness. - 1 1/2 cup gluten free flour, (I use Bob's Red Mill 1:1)
- 1 1/2 cup mashed banana (I used 3 medium ripe bananas)
- 1/2 cup protein powder
- 1 tsp Baking Soda
- 3/4 tsp Baking Powder
- 3/4 tsp Salt
- 1/2 tsp Cinnamon
- 1/2 cup Greek Yogurt I used FAGE 5% milk fat greek yogurt)
- 1/2 cup pure maple syrup
- 1/3 cup avocado oil
- 2 tsp pure vanilla extract
- Chocolate Chips (or walnuts, raisins, etc.)

- Grease 9x5 loaf pan & place parchment paper on the bottom.
- Preheat oven to 350F.
- Mix all of the ingredients together & smooth batter into pan.
- Bake for 40 minutes at 350F until golden brown + a toothpick comes out almost fully clean.
- Turn the oven off and crack door. Leave the bread in there for an additional 5 minutes.
- Use a knife to go around the edges and remove bread from pan.
- Enjoy for up to 4-5 days or freeze and enjoy later.
