I have searched for a good gluten free chocolate chip cookie recipe for a long time and have now tried this one multiple times. It has never failed me. I’ve brought these gluten free chocolate chip cookies to multiple events and no one would even know that they’re gluten free. Super fluffy, chocolaty and the perfect cookie. Ingredients
- 1/2 cup Butter softed
- 1/3 cup cane sugar
- 2/3 cup Brown Sugar packed
- 1 Egg room temperature
- 1 tsp Vanilla Extract
- 1 3/4 cup gluten free flour, I use Bob's Red Mill one-to-one
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 1 1/2 cup Chocolate Chips

Instructions
- Preheat oven to 350F
- Line baking sheet with parchment paper or silicone baking sheets
- Using a hand mixer & a large bowl (or a stand mixer), cream softened, white sugar, and packed light brown sugar for 3-4 minutes on medium speed, or until soft & creamy
- Add the egg and vanilla extract, and cream together another minute with the mixer
- Add the dry ingredients (flour, salt, baking soda) and mix on low speed until just combined.
- Stir in chocolate chips
- Using a small cookie scoop, scoop cookie dough onto lined baking sheets. I have a large baking sheet so I can fit all 33 on one with room for them to spread. If you're using a standard sheet, you will need two
- Bake for 10-12 minutes
- Remove & let cool for 5 minutes, before transferring to wire racks. Enjoy!
- Store in airtight container for 3-4 days
