Simple Berry & Pecan Salad with Goat Cheese

This is seriously one of my favorite salads ever and I swear I’ve brought it to every backyard party I’ve attended in the last year… And I’m not ashamed. It’s super simple to create, like it might take you mayyyybe 10 minutes, but I think 8 would do 🙂 I normally use strawberries and blueberries, but I’ve used raspberries and blackberries for a totally different taste and just as delicious. This salad is clearly perfect for any American themed party haha, and allows for many different add-ins depending on what it’s for: a party or just for one. I eat a salad basically every day so this is one of my main go to’s. I don’t just eat them because they’re healthy and keep me away from carbs (at least for lunch), but because I have learned to really love a good salad 🙂 The portion is geared towards either making it for you and your honey for dinner OR making it and splitting it for two lunches (my go to). If you’re making it for two lunches I usually mix the berries, lettuce, pecans and goat cheese together in a medium size bowl. I then split it into two servings and add the dressing to whatever one I’m munching on for lunch that day. If I’m adding avocado, I cut it into two and leave the seed in one side to store with the other portion (I’ve heard it can make it last longer!) and then add the protein. I like to cut a chicken breast in half and save the other for lunch the next day… Making a full salad for two days in a row. Winning.

  1. Just mix all of the ingredients together in a medium sized bowl and add dressing upon serving.
Recipe Notes
*Substitutes - sliced almonds, blackberries or raspberries and feta cheese - I've tried all of these before
*Add in's - grilled chicken or salmon and avocado
