I have always been quick meal lover. Don't get me wrong, I love being in the kitchen and making elaborate dishes as well, but with constantly being busy and on the go a quick and easy meal is key. Now bring I the pregnancy and it couldn't be more real than ever. I'm 25 weeks and the hunger is a big thing. I am always snacking or wanting something new an hour after I eat. When I hit hunger you really don't want to be around me. I hit hanger quicker than I ever have before and being able to make a healthy yet quick and easy meal is super necessary.
The Perfect Side to Any Meal
Super Lucky Elephant Thai Mali Jasmine Rice is the perfect addition to almost any meal. It's some of the best rice I've ever had and how could it not be with being grown only in Thailand? The flavoring is amazing and couldn't have paired better with our salmon. I've been trying to add salmon into my weekly dinner or lunch routine because of the goodness it gives Baby O. The best thing about it, aside from the healthy benefits, is the fact that it takes no time at all to make. Overall this meal took 20 minutes and to me that is amazing.
Normally we would just pair our salmon with vegetables of some kind, but this rice was the best thing we could have ever added with it. It made the dinner that much more amazing (Kirby literally couldn't stop talking about it) and with the addition of half an avocado I was in healthy dinner heaven. We already plan to make these in our meal prep sessions (maybe even the Coconut Thai Hom Mali Jasmine Rice next!) because it is way too easy and could go with salmon, chicken, steamed vegetable and so much more. I'm actually really wanting to make it with orange chicken next so I'll keep you posted.
