Granola Berry Crisp
If you're looking for an easy holiday morning breakfast, healthy dessert or just a colorful, anytime snack - this recipe is for you! This simple granola berry crisp took no time to whip up and is packed with flavor. If I'm being honest, I like this best with ice cream (I mean, duh.) However, it's also delicious heated by itself or served with some vanilla yogurt.
You could switch up the berries or fruit with so many combinations! I think I'm going to try peaches and blueberries next. With it being the holiday season and so many of us being at home, I knew a quick and healthy recipe was needed. This would be perfect for Thanksgiving or Christmas morning; in-between all the cookies and stuffing, of course!
Simple Granola Berry Crisp
-1/2 cup gluten free flour
-4 tbsp. cold cubed dairy free butter
-1 1/2 cup granola (I used Safe & Fair Honey Crisp Apple Pie - use code CHIFFON10 for 10% off!)
-2lbs frozen berries (I used a mix of strawberries, blackberries, raspberries and blueberries)
-1/4 cup of sugar
-1/4 cup gluten free flour
-1 tsp. cinnamon
-1/2 tsp. ginger
-1/4 tsp. nutmeg
In a small bowl, mix gluten free flour & cold cubed butter. Use a fork to cut butter into the flour until crumbly. Mix in granola until well combined. Set aside.
In a large bowl, combine ingredients for berry mixture and mix until well combined. Pour mixture into a 9x12 pan and top with granola mixture. Bake for 45 minutes at 350F.
