The minute fall season hits I start baking with pumpkin. It’s definitely my favorite ingredient to use because obviously it tastes delicious, but it also helps make everything more moist which is my favooorritee 🙂 These cookies were originally found on Eazy Peazy Mealz, but I altered the recipe just a bit. Ingredients
- 1 1/2 Cups Granulated Sugar
- 1/2 Cup Brown Sugar
- 1 Cup Vegetable Oil
- 2 Eggs
- 1 Can Pumpkin Puree
- 1 1/2 Tsp Vanilla Extract
- 4 Cups All-Pupose Flour
- 2 Tsp Baking Soda
- 4 Tsp Baking Powder
- 1 Tsp Salt
- 2 1/2 Tsp Cinnamon
- 2 1/2 - 3 Tsp Pumpkin Pie Spice
- 1 Bag Chocolate Chips

Instructions
- Preheat oven to 350 degrees
- Combine the sugars, oil, eggs, pumpkin and vanilla in stand mixer
- Mix the flour, baking soda+powder, salt, cinnamon and pumpkin pie spice in a large separate bowl
- Combine flour mixture with pumpkin mixture and then fold in chocolate chips
- Line baking sheets with parchment paper; cover paper with flour (also put on finger tips)
- Create 9-12 cookies per tray and bake 12 minutes for regular size cookies; bake 14+ for larger cookies
- Remove from over and let cool for 5 minutes before enjoying 🙂
