The Softest EVER Pumpkin Chocolate Chip Cookies

The minute fall season hits I start baking with pumpkin. It’s definitely my favorite ingredient to use because obviously it tastes delicious, but it also helps make everything more moist which is my favooorritee 🙂 These cookies were originally found on Eazy Peazy Mealz, but I altered the recipe just a bit. Instructions
  1. Preheat oven to 350 degrees
  2. Combine the sugars, oil, eggs, pumpkin and vanilla in stand mixer
  3. Mix the flour, baking soda+powder, salt, cinnamon and pumpkin pie spice in a large separate bowl
  4. Combine flour mixture with pumpkin mixture and then fold in chocolate chips
  5. Line baking sheets with parchment paper; cover paper with flour (also put on finger tips)
  6. Create 9-12 cookies per tray and bake 12 minutes for regular size cookies; bake 14+ for larger cookies
  7. Remove from over and let cool for 5 minutes before enjoying 🙂
