As you know, Kirby and I are huge snackers when it comes to the weekends. We just love to be in the kitchen together and enjoy trying to whip up new dishes all the time. It may be past Football Season, but you know what that means… Baseball season is right around the corner! Woohoo! We had a blast making this Nacho Party Platter and it is seriously the perfect dish for any type of get together. It’s super simple to make and of course we loaded our’s with cheese.
I think the best part about a Nacho Party Platter is how many things you can add or not ad depending on what you prefer. For instance, Kirby is not a fan of olives at all and I’m not a huge fan of spicy things. With this dish we were able to go half and half on both which made it even more delicious for both of us. We added ground beef to ours, but you really could add whatever type of protein you want or forgo it all together for an even simpler dish. Whatever you like, this is the perfect appetizer sure to please everyone.

- Tortilla Chips
- 2 Cups Mexican Blend Shredded Cheese
- 1 lb. Ground Beef
- 1 Jalapeno Chopped
- 1 2.25 Ounce Can of Olives Halved
- 1 14.5 Ounce Can of Black Beans Drained & Rinsed
- 1 Handful Cherry Tomatoes Halved
- 1 Half Red Onion Chopped

- Preheat the oven to 350. Cook the ground beef in a skillet until browned. While browning the meat chop whatever vegetables you plan on adding.
- Add one layer of chips in the platter and top with shredded cheese. Add the second layer of chips and sprinkle a small amount of cheese over the top.
- Layer the chips with ground beef, chopped vegetables and more shredded cheese.
- Put in the oven for 20-25 minutes or until cheese is melted. Enjoy!
