These delicious gluten free cinnamon sugar donuts are by far some of the best donuts I’ve ever baked. Super fluffy and soft, full of flavor and pretty simple to make. My kids (and me too!) love a good donut, but hate all the bad ingredients found in store bought. Whipping up baked donuts is something I’ve gotten used to over the past couple years and these are one of the quickest one’s I’ve found. I was able to make these gluten free cinnamon sugar donuts in 30 minutes while the kids played outside so we could all enjoy them (warm!) for an afternoon snack. It was seriously hard not to finish all 6 in one sitting. They store well for 2-3 days in an airtight container, but your kids will be begging for them the next morning. For next day, I would warm the gluten free cinnamon sugar donuts up for 5-10 seconds to get that fresh taste to them. They’re so yummy! Original recipe from Gluten Free Palate.

- 1 cup gluten free flour blend
- 1/3 cup coconut sugar
- 1 tsp Baking Powder
- 1 tsp Cinnamon I'm always generous with this serving
- 1/2 tsp Salt
- 1 large Egg
- 1 tsp Vanilla
- 1/4 cup + 2 tbsp avocado oil
- 1/4 cup + 2 tbsp Milk (any kind)
- 1 tsp apple cider vinegar
- 1/4 cup cane sugar
- 1 tsp Cinnamon
- 1-2 tbsp butter, melted for coating to stick

For the coating:

- Preheat oven to 425F and grease a 6 serving donut pan with butter.
- In a large bowl, mix the flour, coconut sugar, baking powder, cinnamon and salt.
- Add the egg, oil, vanilla, milk and apple cider vinegar. Mix until combined.
- Spoon the batter into the grease donut pan. The batter should not cover the center of the donut well where the hole will go.
- Bake for 10-12 minutes or until the donuts rise and set.
- Remove from oven and let cool.
- Place on wire rack over parchment paper.
- For the coating: combined the cane sugar and cinnamon in a mixing bowl.
- Melt 1-2 tbsp of butter. One at a time, lightly brush each donut with melted butter and immediately dip the top into the sugar coating before flipping to the bottom.
- Place each gluten free cinnamon sugar donut on the rack and repeat on all donuts until they're coated.
- Store donuts in airtight container for up to 3 days - however they'll be gone within 24 hours 😉
