Ingredients

ripe bananas,
mashed
1/3

melted butter

Baking Soda

gluten free flour,
I use Bob’s Red Mill 1-to-1
pinch of salt
1/2
cup
pure maple syrup
1/2
tsp
Cinnamon

Eggs
beaten

tsp
pure vanilla extract

fresh or frozen blueberries
Instructions
Preheat oven to 350 F
Use butter for the muffin tins
In a mixing bowl, mash the bananas with a fork until smooth
Add the baking soda and stir to combine with the mashed bananas. Allow the mixture to sit for 1 to 2 minutes
Stir the melted butter into the mashed bananas
Stir in the pure maple syrup, salt, beaten eggs, and pure vanilla extract
Mix in the gluten-free flour and cinnamon
Stir in fresh or frozen blueberries, gently
Scoop the batter into buttered muffin tins
Bake 15-20 minutes at 350 F until toothpick comes out clean
Cool & enjoy! Store in airtight container for 2-3 days
