Growing up I was never a big breakfast eater. My mom would always force me to eat something before leaving the house for school. Obviously, I would usually go for the sausage or bacon because duh. As I’ve gotten older, wiser (somewhat ha) and more creative with my meals I’ve learned to love cooking breakfast. I’ve actually even found it to be necessary! I definitely still opt for the good ole’ bowl of cereal and will never give that up, but fitting eggs, avocado, etc. in has really changed my morning routine.

Over the holidays Kirby and I always love to get a little extra with our meals and breakfast is not left out. Check out the delicious Lemon Poppy Seed Pancakes we made which happen to be the only pancakes I’ll really eat. When I found these delicious & super cute looking Bacon and Egg Crescent Squares I knew we needed to give it go.

As many of our recipes we cut this one in half since it was just the two of us, but these babes are definitely filling. I mean, you can’t tell me you don’t love Pillsbury Crescent rolls? If you don’t, we need to rethink our friendship 😉 Anyway, these were fairly easy to make and left our tummies super happy. We opted for turkey bacon because I’ve actually learned to love that more than normal bacon; Kirby, not so much. Wives know best though, right?

Whether it’s the holidays or just a fun Sunday morning at home make sure to try this recipe out! I will say again, they’re way more filling than you’d think, but to be honest I think it’s worth every calorie! Shocker: our’s didn’t turn out as Pinterest worthy as the original pictures, but it still tastes just as good. Also, you need to be a little crafty when cracking the eggs into the crescent dough, but if I can do it so can you!

Instructions
  1. Preheat oven to 400°F. Open and unroll the crescents onto a parchment-lined baking sheet. Split each sheet of dough right down the middle, so you have a total of 2 large squares of dough. Pinch perforations together in each square to seal dough seams.
  2. Fold up the edges of the dough (about 1/2 inch of the edge around each square). Crack two eggs into the center of each dough square. Sprinkle with a bit of Parmesan and a smidgen of salt and pepper.
  3. Place three slices of bacon across the eggs on each square. Sprinkle with remaining Parmesan cheese, and additional salt and pepper if desired.
  4. Bake in oven for 10-12 minutes, until the edges of the dough are golden brown and the eggs are cooked to your preference.
