Pasta is by far one of my favorite things to eat and when it’s paired with pesto, I’m basically in heaven. This Baked Shells with Pesto, Mozzarella and Meat Sauce Recipe is definitely at the top of the list! Sunday’s are all about indulging… To be honest, most weekends are ha! So whenever I run out of ideas on what to make I always turn to a pasta dish. This one is great to make on a Sunday for two because it leaves you with a ton of delicious leftovers.

I found this recipe from Vikalinka and after reading the comments I knew we were going to need double the pesto. If you didn’t know already, we’re huge fans and looking back I might even add more next time. Another thing I’m a huge fan of… One pot dinners! We love using our trusty dutch oven. If you don’t have one, run don’t walk to your closest store and snag it. I promise you will never look back. We obviously had to cook the pasta in a separate pan, but everything else is done in the dutch oven making clean up much easier.

The original recipe calls for store bought pesto, but if you’re feeling up to it check out my super easy homemade pesto recipe here. We freeze 20+ recipes each year and just defrost it before using + add the parmesan cheese. It’s a lot easier than people thing, so don’t overthink it! If you do buy store bought search for the ones made without pine nuts for a more basil taste.

Instructions
  1. Heat the oven to 400F/200C.
  2. Cook chopped onion in olive oil over low heat for 5-7 minutes until soft but not coloured.
  3. Add ground beef and cook, stirring it the whole until no longer pink.
  4. Add, salt, chopped basil and canned tomatoes, bring to a boil and then turn the heat down and simmer for 20 minutes, stir one in a while and break up any large tomato chunks with a wooden spoon.
  5. While the sauce is simmering, cook the shells in a large pot according to package instructions. It's important not to overcook pasta but cook it al dente as it will be further cooked in the oven.
  6. At the end of cooking time stir pesto into the sauce and take it off the heat.
  7. Drain pasta and gently toss it with the sauce in the same pot the pasta was cooked in.
  8. Put half of the pasta in the baking dish and sprinkle with half of mozzarella and Parmesan.
  9. Top it up with the remaining pasta and sprinkle with more mozzarella and Parmesan.
  10. Bake in the oven for 15 minutes until cheese is golden and pasta is hot and bubbly.
